Extra Virgin Olive Oils are created using methods that do not alter the oil. This typically will be done using a cold-press method. The Taste of EVOOS will vary depending on the variety of Olives that are pressed to create the oil. The International Olive Council estimates that there are about 139 varieties of Olives which are regularly cultivated for Olive Oil Production.
